Cranberry Chicken and Rice
At Home: (these quantities serve one person)
First ziplock bag:
1/2 of the contents of a Knorr’s Vegetable Recipe Mix
1/2 teaspoons chicken bullion
1/4 teaspoon salt
1/2 teaspoon dried parsley
1/2 tablespoon dried minced onion
1/4 cup dried cranberries
Second ziplock bag:
1 tbsp slivered almonds
Third ziplock bag:
1/4 cups freeze dried chicken
Fourth ziplock bag:
1 cup instant rice
On the Trail:
Heat 2 cups of water. When it starts to boil, set to simmer and add chicken, cranberries, dried ingredients, and rice. Let simmer, stirring frequently, for 12 minutes. When rice is tender, pour off into bowl, and top with slivered almonds. The cranberries add a little sweetness, and the almonds a little crunch. This is a delicious meal, and filling. Adjust quantity of rice to personal taste.
