Thai Curry Rice and Chicken

In one bag put 1/2 cup of Minute rice (for one person)

In another bag put 1/4 c dried vegetables (I used a vegetable mix from Pack-It Gourmet)

Include a packaged spice mix such as Thai Chicken Curry (one half of a 1 oz package serves 1)

Have a third bag holding 1/2 c freeze dried chicken cubes.

Put all in a zip lock bag. Include these instruction:

Bring 1.5 cups water to boil. While its heating up, add the dehydrated vegetables, the Thai curry spice mix. and the freeze dried chicken cubes. When the water boils, simmer for another 7 minutes, and add the rice. Continue to simmer for 3 more minutes. The picture below shows the volume that 1 cup of Minute rice yields. Too much for me, but experiment to find your personal perfect serving size.
