Spaghetti with FD sausage granules

Jim and I had a lot of backpacking meals last year (when we did the JMT, followed by a week in the Sawtooths), and this meal was one of our top favorites. We never got tired of it.

At home: I sliced some fresh tomatoes and dried them. I spread some tomato paste from a can on a drier tray and dried them. The other ingredients are things you likely have around the house. The ingredients for a one person serving are:

2.2 oz angel hair pasta (from many trials on the trail, I know I can eat 2.2 oz, my partner Kevin can eat more like 2.6 oz)

1 oz olive oil in pack (Pack-it Gourmet)

1 oz dried tomato slices

1 oz dried tomato paste

1 oz Parmesan cheese

1 oz freeze dried sausage granules (from Pack-it Gourmet)

spices: 1/4 tsp oregano; 1/6 tsp garlic powder; 1/4 tsp Italian spaghetti herb mix

In a cup, add the tomato ingredients, sausage granules, and spices. In a small pot, bring 1.25 cups water to a boil. Pour off enough hot water to the cup to cover the dry ingredients. Add the pasta to the boiling water, and simmer for about 5 minutes or until the angel hair pasta softens. When the pasta is softened, Pour off excess water, and add the tomato and sausage mix. Stir a bit, and let it simmer for a few minutes. Put Parmesan cheese on top, eat when it cools off a bit.
