Spicy Beef Couscous

We had this dish on our trip to the White Clouds in Idaho, and it was so delicious. Its in my top 3 favorites now for sure!

Spicy Beef & Tomato Couscous

 Yield: 2, prep time 10 minutes

 

  • 3⁄4 c couscous
  • 1⁄4 c diced sundried tomatoes
  • 1⁄4 c cooked and dehdyrated hamburger, freeze dried beef cubes, or FD sausage granules
  • 2 T diced dried onion
  • 1 T dried chives
  • 1 T dried parsley
  • 1 1⁄2 t low sodium beef bouillon
  • 1⁄2 t ground cumin
  • 1⁄2 t dried garlic
  • 1⁄4 t ground black pepper
  • 1⁄4 t red pepper flakes
  • 1 T olive oil (1 packet)
  • 1 1⁄2 c water

At home pack the dry ingredients in a quart freezer or sandwich bag.

Beef Couscous Directions: Put the dry ingredients in a cup or bowl.  Heat 3 cups water. When the water is hot, pour 1 cup into the dry ingredients to rehydrate (everything but the couscous). When the other two cups are boiling add couscous, simmer, and stir occasionally till the couscou is done, about 5 or 6 minutes.   Add the rehydrated dry ingredients when the pasta is done, stir and eat.  This was a bit too spicy for Laura, so reduce the pepper flakes to your taste.  A little extra water works well with this dish, makes it soupy.
